Tropical Fruit Salsa

Much to all of Texas’ dismay, it’s nearly summer. The days of 1,000-degree heat are right around the corner. But summer isn’t all bad. Think of the cookouts with friends! Or maybe you cook in with friends instead. Regardless of whether you head to the patio or not, this time of year begs for us to use all the fresh fruits and veggies we can get our hands on. This tropical fruit salsa is a fun way to add a little something extra to your grilled fish or chicken. Or, serve it as an appetizer with some of your favorite tortilla chips. This salsa is as pretty (and EASY) as it is tasty!

Here’s what you’ll need:

  • Pineapple
  • Watermelon
  • Mango
  • Red pepper
  • Red onion
  • Jalapeno
  • Papaya
  • 2 tbsp. lime juice
  • 1/2 tsp. chili powder
  • 1/2 tsp. salt
  • Cilantro

Here’s what you do:

Chop fruit and veggies. Add to a serving bowl. Add spices and mix. Spoon over grilled chicken or fish or serve with chips. Enjoy! 😉
